Starbucks... I DON'T NEED YOU ANYMORE
approximately two months after getting my espresso machine for Christmas from Chad's adorable parents I have MASTERED my homemade iced skinny vanilla latte. The satisfaction that I feel was only heightened when I sampled my second attempt at a homemade spinach feta wrap,my other Starbucks addiction. I tried last weekend to make the wrap and proceeded to throw it away after one bite. It was by far the worst thing I have EVER made.
This weekend I tried again... Yumm yumm yummmmmm
The recipe for success.
Starbucks Spinach Feta Wrap Recipe Knockoff
First, I took a can of whole tomatoes and dumped the entire contents into a large baking dish. Large tomatoes should be halved. The tomatoes and juice were seasoned with sea salt, pepper, and dried basil. I roasted the tomatoes in the oven for 15-20 minutes.
I scrambled up some eggbeaters with a little salt, pepper to a very soft texture. They will be heated a little in the oven so it is important not to overcook (last week's mistake)
Clean out the pan you scrambled the eggs in place a few roasted tomatoes, a couple of spoonfuls of the sauce, a bit of feta, even less shredded mozzarella, and some fresh spinach. Heated until cheese melts and spinach wilts. This mixture is spread over the whole wheat wrap. I used Flatout multi grain wraps(YUM YUM YUM). They are awesome for people who don't know how to roll a burrito because they are super fat and rectangular.
All you must do next is place the scrambled eggs on the wrap, top with a bit more mixture, roll up, and toss in the over so the outside of the wrap can crisp up a bit on the outside. Again, don't overdo the toasting (2nd last week mistake).
So there you are... follow that recipe or hop in your car, find a Starbucks, and shell out $3.25 for one in 45 seconds...
